Ham and Egg Cups:

Ingredients:
(For each cup)

1 slice high quality deli ham
1 egg
1 T mushroom duxelles
Chive or gr. Onion to garnish

Duxelles:
1 sm onion, finely diced
3 pkgs asst mushrooms, finely diced in a food processor or knife
Salt and pepper to taste

To make:

Lightly spray a muffin tin and line with ham. Add a tablespoon of duxelles. Gently crack an egg into cup, season. Bake at 400• until eggs are done to your liking; about 10-15 min. Gently remove with a soup spoon and serve.

Breakfast Tacos:

Ingredients:

1 can black beans, rinsed
1 sm onion diced finely
1 t cumin

Simple salsa:
2 Roma tomatoes, diced
1 T green onion, diced
1T cilantro, diced
Salt and pinch chili powder
Squirt lime juice

Scrambled egg
Mexican Hot sauce
Warm tortillas for service

To make:

Make simple salsa, set aside. Sauté onion until softened, season. Add black beans and keep warm. Warm tortillas.

Make large curd scrambled eggs, seasoned with s&p. Top warm tortillas with black beans,eggs,salsa and hot sauce. Muy bueno!

Eggs with Polenta:
Ingredients:
1 cup polenta or corn meal
1 qt stock, simmering
Splash heavy cream
1/4 cup grated cheese if desired

For the polenta:
Season diluted stock with salt and add polenta a little at a time. Simmer at least 1/2 hour to many hours (can’t really overlook) adding liquid if necessary. Cook to desired thickness, adding cream and cheese to finish. Serve with garnish.

Optional Polenta garnish:
Fried or boiled egg
Shrimp
Bacon
Saucisson or sausage
Ham, country ham or Tasso
Gr onion
Tomato sauce and or hot sauce

Ice Fishing Sandwich:

Base:
1/2 sm onion, diced and sautéed until soft
S&P to taste
1/2 t onion powder
1/4 t garlic powder
1 pkg cream cheese
1-2 t grainy mustard
(If using seafood add lemon zest and dill weed)

Sauté onions ,season. Remove pan from heat. Add mustard, cream cheese and add-ins. (Note: without add-ins this is an excellent seafood stuffing!)

Add ins:
Cooked roast beef or short ribs
Bar b q
Ham or Bacon
Smoked fish

To assemble: slice baguette in half and open. Smear filling generously. Wrap in foil and roast in a 350• oven for approximately 1/2 hour. Remove, let rest 5 min. Slice into chunks and serve.

OR:
After roasting, wrap in newspaper, a kitchen towel, and put in a warm cooler. Best enjoyed an hour later with a thermos of coffee in an ice shack.
